It is a handmade dried Jiuqu made by craftsmen using only white rice from Okayama and Hiroshima prefectures.
It was slowly dried with warm air so as not to destroy the Jiuqu.

Please use it for making amazake, miso, salt koji, etc.
* For customers who refer to the recipe using raw Jiuqu, put 500g of dried Jiuqu and 200cc of hot water of 40 to 50 degrees in the tapper, cover it, and keep it warm for about 30 minutes. At this time, be careful that the temperature does not exceed 60 degrees (the bacteria will weaken). Also, please note that if the temperature is too low, the core will not be softened due to osmotic pressure.
